The height of wedding season is upon us, so what better time to talk about the wedding dessert trends that are dominating 2018? Whether you’re about to walk down the aisle or you’re planning your “I dos” for next year, here are some fantastic trends we’ve been keeping an eye on that’ll make your special day even more memorable – even if you’re planning a last-minute update to the menu!
Weddings and flowers go hand in hand, of course, and everyone expects to see plenty of blooms during the ceremony and at the reception. In 2018, however, many couples are taking the floral aspect even further by incorporating them as edible decorations or flavorings. Roses and rosewater have long been used to flavor cake and we’re seeing an upswing in their use. Other floral flavorings we’re seeing more of in sweet treats are elderflower, lavender, hibiscus, and even violets. With the right balance of sweet, these floral treats can put a memorable spin on the traditional white or chocolate cake. Plus, you can color-coordinate the decorations to match!
With every passing year, we see more and more people who want to know where there food comes from and whether it’s organic. One of the reasons we love working in Sonoma and Napa Counties is the farm-to-table culture, so we know how rewarding it is to know which local farm your berries or citrus come from. Don’t be surprised if a significant portion of your guest list prefers to know that their food is pesticide and chemical-free.
Do you feel like you’re suddenly seeing matcha powder everywhere? You’re not alone. This green tea powder is seeing the spotlight all over the country and being featured in many desserts. We’re seeing it in tea lattes, cupcakes, layer cake, cookies, candies, ice cream, and almost anything else you can think of. Is one of your wedding colors green? Then this may be the perfect way to add a little delicious color to your dessert tray.
Dietary trends are nothing new – we see them all the time. Whether people are going gluten-free or replacing carbs with healthy fats, there’s always a new trend to experiment with that people swear by. Veganism isn’t necessarily one of these trends, but vegan treats are seeing an upsurge as people are generally becoming more aware of what they put into their body. Vegan bakers are receiving orders not only from vegan couples, but also from non-vegans who appreciate the inventiveness and great flavor of their products. We’re also seeing more meatless weddings than ever before!
Couples who really love food are often interested in finding something different to offer their guests, dessert included, and there’s definitely a rising trend toward looking beyond the USA for desserts to try. Korean rice cakes or Turkish baklava may make an appearance at a wedding near you, so keep an eye out!
We’ve been seeing creative approaches to the dessert bar for a while, and that trend isn’t going anywhere in 2018. Making sure the dessert experience is a presentation on par with any other part of the dinner is a top priority. Couples keep coming up with more and more inventive ways to showcase the sweetness at their wedding, from decorate-your-own-donut bars to strawberry shortcake. The ante keeps upping itself and we’re always so excited to make a couple’s dessert bar dreams come true.
